Fresh Green Pea and Spirulina Fritters

Ingredients:

100g fresh green peas
100g cauliflower, grated 
1tsp grated ginger
A squeeze of lemon
30g chickpea flour
1 tbsp flaxseed, ground 
60ml coconut milk (or any other plant-based milk)
1 tsp spirulina 
1 tsp garam masala 
1 tsp turmeric powder
Pinch of salt and pepper 
Coconut oil, for frying

Method:

  1. Mix cauliflower, peas, ginger in a bowl. Add a squeeze of lemon.

  2. Mix chickpea flour, ground flaxseed and spices in a bowl. 

  3. Mix together vegetables and dry ingredients and add the milk. 

  4. Heat up coconut oil in a pan. When hot, add a tbsp of the mixture and flatten it a bit with the spoon so you have a nice little fritter.

  5. Fry for about 90 seconds each side.

  6. Serve with a sprinkle of spirulina, pomegranate seeds, coconut yoghurt or a homemade pesto/salsa verde.

  7. Enjoy
